After going through several USB cameras and buggy Windows/Mac webcam software, we settled on Axis network cameras. These have their own ethernet ports and embedded Linux; they can FTP stills to another webserver or serve them directly using their own internal webservers. (We do it with FTP as it's a bit more secure.)

The webcams we're currently using are an Axis 2110, an Axis 221, and three Axis 210's. The 221 is the night-vision one. The 210 and 221 models can do MPEG-4 streaming, which we have disabled so it doesn't chew up all the bandwidth on our home DSL line.
